Actually, judging by the abilities they were said to have, it'd be more like beating Thin Air (or maybe Thick Air) to death. When in the "invisible" state, they can just walk through a wall. Remember what Amos said? "They came Out of the Walls!"
In order to kill it, they had to get it to materialize. Once it did and they started shooting, It seemed unable to retreat back into the insubstantial state.
Of course, we don't know just how bad off it was because of the long period of hybernation and starvation it had undergone. It might have been a lot tougher after a few more weeks of "good eating".
The soldier seemed to be trying to keep from attracting attention. That would explain why, even though it had to be Very Hungry, there were no deaths reported. And why Amos was able to goad it out of hiding.
Most likely, it and all the other Dark Servants were under orders from the Shadows to be inconspicuous for as long as possible to avoid tipping the Shadow's hand too early. Nothing like a trail of dead bodies pointing straight at Z'ha'Dum to make the boss angry.
